♥ SLOW-COOKER CHICKEN READY FOR CHICKEN ENCHILADA DINNER! ♥

  SLOW-COOKER CHICKEN ... READY FOR CHICKEN ENCHILADA DINNER! 


This is so good. You can slow cook chicken with all ingredients except for cheese, tortilla and sour cream the night before while watching TV or set it off in the morning.....ready to stuff enchiladas and bake for dinner. Hint....You can also use chicken for tacos, burritos, nachos, even over rice and beans.




Ingredients


2 lbs. Chicken
1 can enchilada sauce
1 pouch taco seasoning
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup pico de gio
1 can Ro-Tel Diced Tomatoes & Green Chilies
1 teaspoon garlic
1 tablespoon chili powder
1/4 teaspoon oregano
1/4 teaspoon parsley
1/4 teaspoon basil

1/4 teaspoon Louisiana Cajun Seasoning
1/4 teaspoon Cayenne Pepper
1 teaspoon Mrs. Dash Garlic & Herb
1/2 cup water
1/4 cup salsa
1 green chopped peppers
11/2 cups Mexican cheese
10 - 12 flour tortilla
1/2 cup sour cream


Directions

Spray slow cooker with cooking spray
Place chicken and all ingredients except for tortillas, cheese and sour cream. Cook on low heat 6-8 hours or high heat 4-6 or until chicken pulls apart with fork. 



40 minutes before dinner time, pre-heat oven to 400° for 10 Minutes.  Grease 11x7 inch or 8 or 9 inch square baking pan.  If dark or medal nonstick pan 425°.

Fill each tortilla with Chicken mixture and roll up. Place seam side down in pan. 

Top with enchilada sauce and cheese. Cover with foil and bake for 20 minutes or until cheese melts.


Serve 2 enchilada each.....5 - 6 Servings



Serve plain....



Serve with sour cream if desired.
