♥ MEXICAN LASAGNA ♥

MEXICAN LASAGNA

Ingredients:

  • Olive Oil No-Stick Cooking Spray
  • 2 cans (15 oz each) Chef Boyardee® Beef Ravioli
  • 1 can RO TEL Original Diced Tomatoes & Green Chilies, drained well
  • 1-1/2 teaspoons Oregano
  • 1-1/2 teaspoons Kroger Zesty Seasoning Garlic & Herb
  • 1-1/2 teaspoons Minced Garlic
  • 2 sweetener packets
  • 1 cup Kroger Fat Free Cottage Cheese
  • 1 cup Kroger Low Moisture Part Skim Shredded Mozzarella Cheese
  • 1 cup Kroger Mexican Style Shredded Cheese
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup pico de gio

Directions:
  1. Preheat oven to 375°F. Spray 8x8-inch glass baking dish with cooking spray. 
  2. Combine Chef Boyardee® Beef Ravioli, drained RO TEL Original Diced Tomatoes & Green Chilies, sweetener, Oregano and Kroger Zesty Seasoning Garlic & Herb in medium microwave-safe bowl. Cover with plastic wrap and microwave on HIGH 3 to 4 minutes or until mixture is hot. Combine cottage cheese, chopped onion, chopped celery and pico de gio small bowl.
  3. Place half of ravioli mixture in bottom of baking dish. Top with half of cottage cheese mixture and 1 cup shredded cheese. Repeat layers. Bake 15 minutes or until cheese is hot and bubbly.
Serves 6 (1 cup Servings)
Can be served over Tortilla Chips 2 oz per serving
