BREAKFAST STUFFED BAKED POTATO


You have left over brisket from your barbecue?  Give this delicious recipe a try for either breakfast, lunch or dinner.


PER POTATO

1 STEAKHOUSE BAKER POTATO
1/4 TSP KROGER ZESTY BLEND SEASONING
1 TBSP SHEDD'S SPREAD COUNTRY CROCK CALCIUM - VITAMIN D
2 THIN SLICES GROUND BRISKET
1 EGG
1 TBSP KROGER FAT FREE SOUR CREAM
1/8 CUP KROGER LOW MOISTURE PART SKIM SHREDDED MOZZARELLA CHEESE
1/8 CUP CHOPPED ONIONS
1/8 CUP CELERY
1/8 CUP PICO DE GIO
MILD SALSA

Wash potatoes and poke holes in potatoes on all sides. Place 2 Steakhouse Baker Potatoes in microwave for 10 minutes. Place the next 2 Steakhouse Baker potatoes in microwave for 10 minutes. While they are cooking, take one potato and cut open. Sprinkle 1/4 tsp Kroger Zesty Blend Seasoning and add 1 Tbsp Shedd's Spread Country Crock. Add ground brisket, 1 egg and 1/8 cup of mozzarella cheese. Place in microwave till cheese melts and egg is cooked. Remove from oven and add 1/8 cup chopped onions, 1/8 cup chopped celery and 1/8 cup of pico de gio, top with sour cream and mild salsa to taste. Repeat this with each potato. .... ENJOY!!
