♥ MEX-ARONI ♥

MEX-ARONI CASSEROLE 

Ingredients:

  • 2 cans (15 oz each) Chef Boyardee® Beefaroni® Pasta
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup pico de gio
  • 1 can  RO TEL Original Diced Tomatoes, drained
  • 1/2 cup Fat Free Sour Cream
  • 1 bag frozen whole kernel corn
  • 1 packet of taco seasoning
  • 1/4 cup shredded Mexican cheese blend
  • 1/4 cup shredded Mozzarella Cheese
  • 1/2 cup broken yellow tortilla chips


Directions:


  1. Steam corn as directed on bag. 
  2. Place Beefaroni, drained tomatoes, corn, onions, celery, pico de gio, corn and taco seasoning in 8x8-inch glass baking dish . 
  3. Microwave covered for 15 minutes. Sprinkle with cheese, sour cream and broken chips just before serving.

Serves 6 (1 cup Servings)
