♥ MEX-ARONI CASSEROLE ♥
Ingredients:
- 2 cans (15 oz each) Chef Boyardee® Beefaroni® Pasta
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup pico de gio
- 1 can RO TEL Original Diced Tomatoes, drained
- 1/2 cup Fat Free Sour Cream
- 1 bag frozen whole kernel corn
- 1 packet of taco seasoning
- 1/4 cup shredded Mexican cheese blend
- 1/4 cup shredded Mozzarella Cheese
- 1/2 cup broken yellow tortilla chips
Directions:
- Steam corn as directed on bag.
- Place Beefaroni, drained tomatoes, corn, onions, celery, pico de gio, corn and taco seasoning in 8x8-inch glass baking dish .
- Microwave covered for 15 minutes. Sprinkle with cheese, sour cream and broken chips just before serving.
Serves 6 (1 cup Servings)
