♥ Slow Cooker Pork Loin Fajita Bowl ♥

Slow Cooker Pork Loin 
Fajita Bowl


Large tortilla 

Ingredients:

2 - 2 ½ lbs pork loin
1 cups of water 
1/4 teaspoon oregano parsley, basil, Louisiana Cajun Seasoning,  Cayenne Pepper,  and Mrs. Dash Garlic & Herb

(You can also add 1 sliced green peppers, onion and 1 can Ro-Tel Diced Tomatoes & Green Chilies) I didn't add because I wanted a little more meaty Fajita bowl.


Toppings:

1/4 cup chopped onion

1/4 cup pico de gallo
1 cup shredded lettuce

1/2 cup salsa
1 cup shredded Mexican cheese

1/2 cup light sour cream
4 large or 12 small tortillas (I had only small)

Directions:

Spray slow cooker with cooking spray

Add all ingredients in slow cooker and cooker on low heat 8 - 10 hours.

Pre-heat oven to broil 20 minutes before ready to serve.


Meanwhile remove meat from slow cooker and shred or slice meat.


Place tortillas in taco bowl (I got my taco bowl from Avon) and place in oven broiler for about 5 minutes or until golden brown.

Remove from tortillas and add your toppings.
I put lettuce & pork...
cheese, pico de gallo & onions...
Topped with salsa & sour cream.

Serves 4 .... Enjoy!
