Mama's Italian Meatballs

Ingredients:


1 lb lean ground beef or turkey
1/4 cup chopped onion

1/4 cup chopped celery


1 teaspoon minced garlic

1 tablespoon Mrs Dash Garlic & Herb
1 pouch onion soup mix
1/2 cup Parmesan cheese, divided
1/2 cup Italian style breadcrumbs 
1/4 cup shredded mozzarella cheese

Meatball Sandwich Ingredients:

1/2 cup shredded mozzarella cheese, divided
1/2 cup marinara sauce
3 hoagie rolls, split lengthwise or onion rolls


Directions:

Pre-heat oven 400º (Flavorwave oven No pre-heating necessary) Spray baking pan and set aside.

Meanwhile, in large mixing bowl stir in half of the parmesan cheese, and all of the above ingredients.  Mix until evenly blended, then form into 1 1/2-inch meatballs.  Roll meatballs in the rest of the parmesan cheese and place onto a baking sheet.
 Bake for 20-25 minutes ...

Place meatballs on paper towel to drain off any excess grease.

I made this for another night, so I placed parchment paper, plastic wrap (push the plastic wrap all around the meat so no air gets in.  This will protect it from freezer burn.) and I also wrap foil before placing in freezer. Now you made your own frozen dinner for another night.  Just defrost and pop in oven or microwave until hot!

We had some with our leftover anniversary dinner and tonight I made meatball sandwiches.

I placed the meatballs in microwave safe dish 

and cover with marinara sauce, covered it. Then heat 5 minutes on high. 

Place meatballs on rolls and sprinkle mozzarella cheese over.

I had it with a side of my purple potato salad...
