Homemade Potato Tuna Cakes






Ingredients:

2 large or 4 small cans tuna
1 egg
1/2 cup mayonnaise
1/4 cup seasoned bread crumbs
1/4 cup dry potato flakes
1/4 cup celery
1/4 cup diced onion
1/4 cup pico de gallo
1 tablespoon minced garlic
1/4 teaspoon dried dill weed
1 teaspoon Mrs. Dash Garlic & Herb
1 teaspoon chives
1 teaspoon yellow mustard
1 teaspoon lemon juice


Directions:

In a large bowl, mix tuna with all ingredients. 



Form the mixture into 2 inch balls, and flatten into patties about 1/2 inch thick.

For Freezing: Lay patties on a tray and flash freeze. When they are frozen put them in zip type bags.

Or.....

Place patties in freezer for about 1 hour or prepare the night before and freeze overnight.

To fry....Heat olive oil in a medium skillet over medium heat. In batches, cook patties about 5 minutes on each side, until lightly browned.

To Bake.....Preheat oven to 350° (Flavorwave oven, no preheating required) Spray baking sheet with cooking spray.

Place frozen patties on sheet. Spray tops with cooking spray.  Bake for about 10 minutes and flip them over. Bake for additional 10 minutes or until golden brown.  Enjoy!


Note....You can change this recipe to salmon or crab cakes.  Serve as a side with your favorite vegetables or serve on slider buns. Add your favorite condiments if you like, ketchup, tarter sauce, lemon etc.
