2 med. onions chopped
1 T. Olive oil
3 (4.5 oz.) chopped green chilies, undrained
4 cloves garlic
2 t. ground cumin
2 t. dried oregano
6 c. chicken broth
5 c. chopped cooked chicken breast Pepper Jack cheese
1/2 t. salt
1/4 t. pepper
1/4 c. chopped fresh cilantro
Saute onion in hot oil until tender. Add green chiles and next 3 ingredients. Cook 2 min. stirring constantly. Add beans, chicken broth, chicken, 1 cup cheese, salt, and pepper. Bring to a boil, reduce heat and simmer for 30 min, stirring often. Stir in cilantro.
To serve, put in bowl and top with grated pepper jack cheese. Goes great with a side of corn bread!
