White Bean Chili
4 cans navy beans with jalapenos or 2 cans Great Northern Beans and 2 cans jalapeno navy beans
1 T. Olive oil3 (4.5 oz.) chopped green chilies, undrained4 cloves garlic2 t. ground cumin2 t. dried oregano6 c. chicken broth5 c. chopped cooked chicken breast Pepper Jack cheese1/2 t. salt1/4 t. pepper1/4 c. chopped fresh cilantroSaute onion in hot oil until tender. Add green chiles and next 3 ingredients. Cook 2 min. stirring constantly. Add beans, chicken broth, chicken, 1 cup cheese, salt, and pepper. Bring to a boil, reduce heat and simmer for 30 min, stirring often. Stir in cilantro.To serve, put in bowl and top with grated pepper jack cheese. Goes great with a side of corn bread!
