♥ A STICK TO YOUR RIB MEAL THAT YOUR FAMILY WILL LOVE ♥
On a day like today, rainy and cold or any winter's day, you want a meal that as gram-ma used to say, "Stick to your ribs." Well, this is a recipe that will do just that. It's easy, quick and it will warm you right up. My husband said after I made my stuffed peppers a few weeks ago, "How about chili stuffed peppers with some macaroni and cheese as a side?" So I took his idea and changed it up a bit. He loved it and said it is a definite do over.
Ingredients:
1 lb lean (at least 80%) ground beef
1/4 cup chopped onion
1 chopped green bell pepper
5 cups hot water
1 box macaroni & cheese (I used Skillet Dinner Cheeseburger)
1 can chili
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon oregano
1/4 teaspoon parsley
1/4 teaspoon basil
1/4 teaspoon cilantro
1/4 teaspoon Louisiana Cajun Seasoning
1/4 teaspoon Cayenne Pepper
1/4 teaspoon ground cumin
1 teaspoon Mrs. Dash Garlic & Herb
1/4 teaspoon parsley
1/4 teaspoon basil
1/4 teaspoon cilantro
1/4 teaspoon Louisiana Cajun Seasoning
1/4 teaspoon Cayenne Pepper
1/4 teaspoon ground cumin
1 teaspoon Mrs. Dash Garlic & Herb
2 cans Ro-Tel Diced Tomatoes & Green Chilies
1 can whole kernel corn
Directions:
In 8-inch nonstick skillet, cook ground beef/turkey over medium-high heat, stirring frequently, until meat is no longer pink; drain.
Spray 4-to 5-quart slow cooker with cooking spray. Add to slow cooker meat and all the rest of the ingredients. Cover and cook on Low heat for 3 to 5 hours.
Serve soup plain or with corn chips or crushed tortilla chips, topped with shredded Mexican cheese and sour cream. I put some corn chips and cheese on the bottom, cover it with soup and another layer of corn chips and cheese....mmmm....mmmm....good!
