QUICK AND EASY TACO BAKED STUFFED GREEN PEPPERS 






Ingredients

lb lean ground beef or turkey
1/4 cup chopped onion

1/4 cup chopped celery
1/4 cup pico de gio
1 package taco seasoning mix
1 can Ro-Tel Diced Tomatoes & Green Chilies
1 teaspoon garlic

1/4 teaspoon oregano
1/4 teaspoon parsley
1/4 teaspoon basil
1/4 teaspoon Louisiana Cajun Seasoning
1/4 teaspoon Cayenne Pepper
1 teaspoon Mrs. Dash Garlic & Herb
1/4 cup salsa
3 green peppers cut in half
1 cup shredded Mexican cheese
1/2 cup light sour cream


Directions:


Heat oven to 350°F. 

Cut peppers in half, cut off stem and remove seeds.
Place peppers in microwave safe dish and fill with water covering peppers. Microwave about 5 minutes or until slightly softened. Drain; set aside.

Meanwhile, in 8-inch nonstick skillet, cook ground beef/turkey over medium-high heat, stirring frequently, until meat is no longer pink; drain. Stir in all of the above ingredients except for peppers, cheese and sour cream. Heat to boiling. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally.

In ungreased casserole dish , arrange pepper halves. Spoon meat mixture evenly into each.  Cover and bake 20 to 30 minutes or until peppers are tender. Top individual servings with sour cream, cheese and salsa. Serve over your favorite rice.  ENJOY!
