♥ Slow-Roasted Boneless Leg of Lamb
With Red Potatoes ♥
Use a boneless leg of lamb or leg of lamb cut that will fit in your slow cooker. Here is the brand I bought at Aldi. I still added all the seasoning since I cooked my potatoes with the lamb. I love when all that meat seasoned flavor.
6 large red potatoes, cubed
1/4 Diced Tomatoes
1/4 cup chopped onion
1/4 cup chopped celery
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon basil
1 teaspoon Mrs. Dash Garlic & Herb
2 tablespoon chopped rosemary garlic
2 tablespoon chopped rosemary garlic
1 up of water
Preparation:
Spend some time and cut off ALL the fat that you can (not good, all that fat)
Put the leg in the crockpot/slow cooker.
Sprinkle all seasonings.
Add potatoes, water, celery, onions and tomatoes. Cook for 8 to 10 hrs on LOW or 3 to 5 hours on High. A shorter period if you prefer it slightly under done.
When finished drain the liquid residue into a couple of mugs, cover with foil, freeze for about half an hour or until the the fat has solidified. Lift the fat off and add the remaining stock to the gravy.
