HOMEMADE TX-MEX STUFFED GREEN PEPPERS

♥ HOMEMADE TX-MEX STUFFED GREEN PEPPERS 

This recipe as my husband says. "A DO-OVER"



Ingredients
lb lean ground beef or turkey
1/4 cup chopped onion

1/4 cup chopped celery
1/4 cup pico de gio
1 package taco seasoning mix
1 egg, beaten
2 cups cooked Cheddar Broccoli Rice
6 bell peppers
1 can diced tomatoes

1 can Ro-Tel Diced Tomatoes & Green Chilies
1 teaspoon garlic

1 teaspoon oregano
1 teaspoon parsley

1 teaspoon basil
1 teaspoon Louisiana Cajun Seasoning
1 teaspoon Cayenne Pepper
1 teaspoon Mrs. Dash Garlic & Herb
1/2 cup salsa
1 cup shredded cheddar cheese
1/2 cup light sour cream


Directions:

Cook rice as directed on package
Combine beef/turkey, onion, celery, pinco de gio, all seasoning and egg in a large bowl. Add rice and mix well. Cut peppers tops off and remove seeds and membrane.

Spread undrained tomatoes and Ro-Tel Diced Tomatoes & Green Chilies on the bottom of an ovenproof 12 X 9 inch baking dish or Flavorwave Oven dish. The liquid from the tomatoes will helps make the peppers softer.


Place peppers, cut side up, on top of the tomatoes and spoon beef/turkey mixture into peppers. Top each pepper with salsa.




Bake in preheated 375°F oven for 40-45 minutes or until beef/turkey is cooked thoroughly and peppers are soft. Or in Flavorwave Oven you do not have to preheat oven for 35 minutes or until peppers are soft.

Cover each pepper with salsa and cheese and return to oven, until the cheese melts for about a minute.

Serve with sour cream and additional salsa.
