♥ Taco Chip Casserole ♥

Taco Chip Casserole 


Ingredients:

2 lb lean (at least 80%) ground beef or turkey
1 cup water
1 envelopes (1 oz ) taco seasoning 
1 can (4.5 oz) chopped tomatoes & green chiles
1 cup shredded Mexican cheese or 8 oz can Nacho cheese
1/4 cup chopped celery
1/4 cup chopped green onions

1/4 cup pico de gio
1/4 cup chopped green peppers
1/4 cup chopped red peppers
1/2 cup salsa
1 bag (12 oz) taco chips (extra thick)
Sour cream, if desired


Directions:


Heat oven to 350°F. Spray glass baking dish with cooking spray. In 12-inch nonstick skillet, cook ground beef/turkey over medium-high heat, stirring frequently, until thoroughly cooked; drain.
Stir in water and taco seasoning mix. Bring to a boil; cook 2 to 4 minutes, stirring occasionally, until thickened. Stir in tomatoes & chiles.


Spread crushed taco chips in baking dish. Top with ground beef/turkey mixture.
Sprinkle with cheese, salsa, onions. peppers, celery and pinco de gio

Arrange 18 to 20 tortilla chips around outside edges of baking dish. Bake uncovered about 10 minutes or until cheese is melted. If desired, top with sour cream. Serve with remaining tortilla chips for scooping.
