SLOW COOKER BROCCOLI, SAUSAGE & EGG CASSEROLE

SLOW COOKER BROCCOLI, SAUSAGE & EGG CASSEROLE


I love breakfast and sometimes we like having it for dinner. You also want to make sure you get some vegetable in with your dinner. This recipe does just that and it gets veggies into those picky eaters as well.


Ingredients

1/4 bag of frozen hash brown potatoes
1 box breakfast sausage (cook as directed on box)
1/2 can Ro-Tel Diced Tomatoes & Green Chilies drained


1/2 frozen broccoli (cooked as directed on bag)
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup pico de gio
1 cup shredded chedder cheese
8 Eggs
1/2 cup of milk
1/2 teaspoon oregano
1/2 teaspoon parsley
1/2 teaspoon basil
1/2 tablespoon garlic powder
1/2 teaspoon Mrs. Dash Garlic & Herb
1 tablespoon bacon bits



Directions

Spray crock pot with cooking spray.  Layer hash brown potatoes, diced sausage, Ro-Tel Diced Tomatoes & Green Chilies, chopped broccoli, chopped onion, chopped celery, pico de gio, and shredded cheddar cheese.

In a bowl, mix together eggs and all seasonings. Pour into crock pot, cover and cook on low 3-5 hours.  Eat and enjoy.  

You can serve alone or with you favorite toppings (salsa, sour cream, hot sauce, ketchup etc.)
