♥ Baked Beef & Vegetable with Garlic & Parmesan Potato Dumplings ♥
My husband loves potato dumplings. Hard to believe he's Italian...lol... Anyway, I decided to combine his other favorite food...beef. He's not a big vegetable person, but with the beef and potato dumplings, I thought I'm give it a try. He loved it...he loved it. He said this meal is definitely a do over!! So, here is the recipe below...give it a try for those beef and potato dumpling lovers in your home. You won't have any leftovers. ☺
Ingredients
1/4 cup onion, chopped
2 cans Minestrone soup
1/4 teaspoon pepper
1/4 teaspoon garlic
1/4 teaspoon Mrs Dash Garlic & Herb
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon parsley
1 cup flour mix
1 pouch Roasted Garlic & Parmesan flavored mashed potatoes
1 cup milk
1/4 cup butter
1/4 teaspoon onion
1/4 teaspoon garlic
1/4 teaspoon Mrs Dash Garlic & Herb
1/4 teaspoon oregano
1/4 teaspoon basil
1/4 teaspoon parsley
Directions
- Heat oven to 400°. Spray 11x7-inch glass baking dish with cooking spray.
- In 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in soup, garlic, Mrs Dash Garlic & Herb, oregano, basil, and parsley. Heat to boiling. Pour into baking dish.

In medium bowl, stir flour and dry mashed potatoes. In small microwavable bowl, microwave butter and milk on high for2 minutes. Stir hot milk into flour mixture with fork until soft dough forms; let stand 2 minutes. Drop dough by 11-12 spoonfuls onto hot beef mixture.- I used 2 casserole dishes since it all wouldn't fit into one. You can see that it looks soupy, but that't what you want. It will thicken when it is baked.
- Bake 25 to 30 minutes or until dumplings are cooked and lightly brown. Serve as is or top with your favorite cheese. We used Mozzarella Cheese.

- You can see that now it is not soupy. It looks more like chili.

- Served with Mozzarella Cheese (or whatever you favorite cheese maybe).
