♥ Tortilla Taco Cups ♥

Tortilla Taco Cups


Ingredients:


1 lb. ground beef or turkey

1 package taco seasoning mix
1 can Ro-Tel Diced Tomatoes & Green Chilies, drained

1 ½ cups of water
1 cup of shredded Mexican cheese
8-10 flour tortillas (6 inch)

1 cup of salsa, if desired
1/2 cup chopped onions, if desired
1/2 cup shredded lettuce, if desired
1/2 cup light sour cream, if desired

Directions:

Heat oven to 375°F. 


Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.

Add taco seasoning mix 
Ro-Tel Diced Tomatoes & Green Chilies and water; mix well. Reduce heat to medium; simmer 10 minutes or until ground beef mixture is slightly thickened, stirring occasionally.


Place 1 tortilla in each of 12 ungreased regular-size muffin cups, bending each tortilla to fit in cup; spray each tortilla with cooking spray. Bake tortillas 5 minutes.



Spoon 2 tablespoons beef mixture in center of each cup. Bake 8 to 10 minutes longer or until tops of tortilla cups are crispy and filling is bubbly. 

Serve and top each cup with of your favorite toppings

Add cheese

Add tomatoes

Add salsa

Add lettuce & onions

Topped with sour cream

Enjoy!

I served with a side of Nacho Mac & Cheese
