♥ Tortilla Taco Cups ♥
Ingredients:
1 lb. ground beef or turkey
1 package taco seasoning mix
1 can Ro-Tel Diced Tomatoes & Green Chilies, drained1 ½ cups of water
1 cup of shredded Mexican cheese
8-10 flour tortillas (6 inch)

1 cup of salsa, if desired
1/2 cup chopped onions, if desired
1/2 cup shredded lettuce, if desired
1/2 cup chopped onions, if desired

1/2 cup light sour cream, if desired
Directions:
Heat oven to 375°F.
Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently. Drain.
Add taco seasoning mix Ro-Tel Diced Tomatoes & Green Chilies and water; mix well. Reduce heat to medium; simmer 10 minutes or until ground beef mixture is slightly thickened, stirring occasionally.
Place 1 tortilla in each of 12 ungreased regular-size muffin cups, bending each tortilla to fit in cup; spray each tortilla with cooking spray. Bake tortillas 5 minutes.
Spoon 2 tablespoons beef mixture in center of each cup. Bake 8 to 10 minutes longer or until tops of tortilla cups are crispy and filling is bubbly.
