Okay, I've made meat loaf before with some different ingredients....but this is the best one ever!! We had it on a hoagie tonight since that was John's request. It was just so juicy. If you look at the pictures up close, you can see the Parisian cheese throughout the meat. You can also see the layers of the 2 other cheeses plus bits of real bacon. The top of the meatloaf with the crispy bacon. I must say I really out did myself...LOL...Give it a try and you will say the same!
Ingredients:
2 pounds lean ground beef or turkey
1 1/2 cups Italian breadcrumbs
1 pouch of onion soup mix
1 teaspoon oregano,
parsley, basil, Mrs. Dash
Garlic & Herb, cilantro

1 tablespoon
minced garlic
1/2 can Ro-Tel Diced Tomatoes & Green Chilies
1 can chunky chopped tomatoes
1 eggs
1/4 cup chopped onion
1/4 cup pico de gio
1/4 cup chopped onion
1/4 cup pico de gio
1/2 Parisian cheese
1/2 cup shredded mozzarella
1/2 cup shredded mozzarella
1/2 cup shredded Mexican cheese
1/2 cooked chopped bacon *about 10-12 slices*
Directions:
Pre-heat oven 350º and spray loaf pan with cooking spray and set aside.
In a large bowl, mix all ingredients except shredded cheese and chopped bacon.
Place 1/2 meat mixture in loaf pan. In the center add shredded cheeses and 1/2 of the chopped bacon. Cover now with the rest of the meat and rest of bacon.
