♥ FRITOS® TOPPED CHICKEN ENCHILADA MADE QUICK & EASY! ♥
2 lbs. leftover or caned chicken
1 can enchilada sauce
1/4 cup salsa
1 pouch taco seasoning
1 can Ro-Tel Diced Tomatoes & Green Chilies *NOT DRAINED*1/4 teaspoon garlic, minced onions, oregano, parsley, basil, Mrs. Dash Garlic & Herb
2 cans of cream of chicken soup
10 - 12 flour tortilla
1/2 9.25 oz bag of Fritos® Corn Chips1 1/2 cups Mexican cheese1/2 cup sour cream
Directions
Pre-heat oven to 400° for 10 Minutes. Grease 11x7 inch or 8 or 9 inch square baking pan. If dark or medal nonstick pan 425°.
Mix all ingredients together except for chicken, tortillas, Mexican cheese, Fritos® and sour cream.

In separate bowl, take 1/2 of mixture and add chicken. Mix well.
Fill each tortilla with Chicken mixture
Roll up place seam side down in pan
Top with enchilada sauce mixture, Fritos® and cheese. Cover with foil and bake for 20 minutes or until cheese melts
You can add more Fritos® to your desire
You can add more cheese also to your desire
Serve 2 enchilada each.....5 Servings
I topped and served mine with sour cream
