My Slow Cooker Chicken & Sausage Jambalaya Recipe 


Well, the cold weather is back at night, so John wanted some Jambalaya. Here is my Chicken & Sausage Jambalaya recipe. This recipe is so easy that if you never cooked before, you can do it. Best part is the clean up is easy too. 


Everything goes into the slow cooker. You don't have to watch it, so go to work or shopping, play with the kids, help with homework, take them to their after school activities, etc. Your dinner will be ready when you are.You can substitute chicken for shrimp. Just follow same directions below except hold the shrimp! Add the shrimp at the end with the rice...That's it! Enjoy!



Ingredients:

1 lb. cooked chicken, cut into bite-size pieces 

(I used 2 cans of chicken) 
1 1/2 lbs. sliced sausage 
1/2 cup 
chopped onion
1/2 cup chopped bell pepper (any color)
1/2 cup chopped celery
1 tablespoon minced garlic

tablespoons olive oil
1/4 teaspoon oregano parsley, basil, Louisiana Cajun Seasoning, Cayenne Pepper and Mrs. Dash Garlic & Herb
1/4 cup chunky salsa
1 cup chicken broth
1 can Ro-Tel Diced Tomatoes & Green Chilies
2 cups rice (I used Cajun Dirty Rice & seasoning)



Directions:

Spray slow cooker with cooking spray

Place all ingredients in the slow cooker, excluding the rice. Stir well, the set the slow cooker on low for 6-7 hours, or high for 2-3 hours.

About 30-40 minutes before ready to serve, add the rice. Make sure the rice is completely covered. Then turn the slow cooker on high and cook another 30-40 minutes, until the rice is tender.
