♥ Parmesan Baked Tomatoes ♥
2 ripe tomatoes, sliced
2 tablespoons mayonnaise
4 tablespoons Parmesan cheese
1/2 tablespoon Dijon mustard
1/2 tablespoon brown mustard
1/2 teaspoon dried oregano, parsley,
basil, minced onion, & Mrs. Dash
Garlic & Herb
1/4 cup shredded mozzarella cheese
Directions
Preheat oven to 350° and line baking sheet with foil
Arrange tomato slices in a single layer on a baking sheet. In a small bowl, mix together mayonnaise, Parmesan cheese, Dijon mustard, and brown mustard. Add all seasonings except parsley. Use a spoon to top each tomato slice with a small amount of the mayonnaise mixture. Sprinkle with mozzarella and then top with parsley.
Bake in preheated oven for approximately 15 minutes, or until golden brown. Serve immediately.
Note: This recipe serves 2, but you can double for 4, triple for 6, etc. My husband thought we were just having tomato-mozzarella cheese salad with Italian dressing. He said, "This is delicious and a definite Do - Over!
I served my Parmesan Baked Tomatoes with left over pork chops, mashed potatoes, applesauce and black bread topped with Country Crock
....Mmmmm.....Mmmmm...GREAT!
