♥BROCCOLI AND CHEESE FRIED POTATO DUMPLINGS♥

Ingredients
2 cups of leftover mashed potatoes
1/4 cup chopped onions
1/4 cup Parmesan cheese
1/4 cup chopped broccoli
1 1/2 cups flour
1/2 cup seasoned bread crumbs
4 tablespoons butter
1 egg
Directions
Fill large pot with water and bring to a boil
In a large bowl, mix together potatoes, egg, onions, Parmesan cheese, chopped broccoli and 1 1/4 cups of flour. Place remaining flour in a dish. Using a large spoon, scoop potato mixture and drop onto flour like making drop cookies. Gently roll potato in flour. Continue until all potato mixture has been rolled in flour.
In a large bowl, mix together potatoes, egg, onions, Parmesan cheese, chopped broccoli and 1 1/4 cups of flour. Place remaining flour in a dish. Using a large spoon, scoop potato mixture and drop onto flour like making drop cookies. Gently roll potato in flour. Continue until all potato mixture has been rolled in flour.
With spoon drop about 10-12 potato dumplings into boiling water. Cook for about 10 minutes or until they start to float to the top. Scoop out potato dumplings with straining spoon and place on paper towel. Repeat this until all dumplings are cooked.
